I have impeccable timing....it's freezing cold outside which must mean it's salad post time!
I came across this somewhere in the magic interwebs world..not sure where or why but all I know is that i'm glad I did! It's healthy and tasty and gives you the I-ate-sprouts-so-this-family-block-of-chocolate-won't-matter vibe.
It's super easy and your eyes aren't deceiving you and seeing double....I made two when I took the photo. It's not all that filling so you might want to think about making a big batch, or adding carbs or something...
It is basically just alfalfa, snow pea sprouts (which aren't always easy to find so watercress or even just mix lettuce would all be fine) as your big bed. To that just add some steamed brocolli, blanched snow peas, chopped avo, cucumber and feta. Dress the whole shebang with evoo (I really can't explain how much I hate racheal ray so much for infecting my brain with her abreevs) and lemon juice and it's good to go.
Eat it every so often and it will totally offset the calories of all the other bad stuff you end up consuming...wait.....what? that doesn't work?
