The best muffins ever...


To be calling these muffins is actually a bit of a misnomer (good word) for they are technically referred to by magnolia as "breakfast buns".

They sort of look like muffins, taste like cupcakes of a sort but are nothing like buns. I first got obsessed with making them because overseas I kept eating these tasty raspberry cheese crossaints from au bon pain (you won't regret it) and got addicted to the cream cheese raspberry combo...I soon found out the crossaints were basically satan's gift to your cardiovascular health but eh..they were good.

These were super easy to make, perfectly light and fluffy. My only addition would be wayy more jam than the recipe calls for OR small amount of baked jam and large amount of jam to eat with it.

MAGNOLIA BAKERY RASPBERRY CHEESE BREAKFAST "BUNS"

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
tub (250g) cream cheese, softened
115g unsalted butter, softened
1 cup sugar

2 large eggs, at room temperature

1/4 cup milk

1/2 teaspoon vanilla

  1. Preheat oven to 180

  2. Grease and lightly flour a 12 hole muffin pan

  3. Combine the flour, baking powder, baking soda, and salt. Set aside.

  4. In a large bowl, on the medium speed of an electric mixer, beat together the cream cheese, butter, and sugar until smooth, about 3 minutes. Add the eggs and beat well. Add the dry ingredients in two parts, alternating with the milk and vanilla. Spoon the batter into the muffin cups, filling them about two-thirds full. Drop 3 small dollops (about a teaspoonful each) of raspberry preserves onto the top of each bun and, using the tip of a sharp knife, swirl the preserves into the batter, forming a decorative pattern. Bake for 25–30 minutes, or until a cake tester inserted in the center of the bun comes out clean.

  5. Allow the buns to cool for about 30 minutes before sprinkling with confectioners’ sugar and serving.


bonus points for me cause I did them at 7 am so it was all stepford like....D woke up to fresh bun/muffin/cupcake thingys!

  1. interesting. i'm not a big raspberry fan, but i could probably be convinced to at least try these... if my work-people are nice maybe i'll make them.
