Yayyyyy Australia



So there's the age old debate of pavlova being aussie vs kiwi but I refuse to acknowledge NZ as producing anything other than the mighty delectable pinky bar..

Early this morning I did a pav for today and this being the first year with my new kitchenaid baby the whole thing was just soooo easy it was almost dangerous. The more access I have to pav the worse it is!!

So super easy recipe of 4 egg whites and a pinch of salt beaten till soft peaks then gradually add a cup of sugar (recipe actually calls for a cup and a half but it's up to you really) beat till it's super glossy and thick. Don't mix it much past adding the sugar though. Then fold a tsp and half white vinegar and tsp of vanilla and dollop it out into a circle on baking paper lined tray.



Oven wise you want to crank it quite high to preheat (around 220) then bring it down to 150 once you add the pav and cook it for an hour. The real trick to the perect crunchy chewy soft in the middle pav is to leave it in the oven after the hour (obv with it turned off) till completely cool..will probably take a few hours.

Then decorate etc



I did vanilla cream with white and yellow nectarines and it was delish!



Also a sidenote discovery I found these lamington's in Thomas Dux for like $6 or so and they are amaaaaaaazingly good. Best lamington's ever! super thick choc coating and light as air cake. The brand is Kyton's Bakery. They are from SA and claim to have won some sort of national lamington competition....

    I can't take credit for the flamin galah haha it's been around for a while but I find it sooo funny everytime hah

    yeah you have to get a pinky bar if you like marshmallow stuff..it's a choc coated pink marshmallow caramel bar!they usually only have them on odd establishments though like my local chemist haha
